Pumped Up Waffles

- 1 egg
- 2 tbsp apple sauce
- 1 tsp vanilla
- 3/4 cup of cold water
- 1-1/4 cups of Pumped Up Pancake mix
1) Preheat waffle iron.
2) In medium bowl, beat egg until light and foamy.
3) Add apple sauce, vanilla and water to egg and whisk together.
4) Whisk in Pumped Up Pancake mix. Add additional water or mix to get desired thickness. Batter should pour easily but not be too thin. Batter will thicken as it sits.
5) Pour half of the batter into heated 6 ½ inch waffle iron and cook until golden brown. Makes 3 large waffles.
Each waffle has over 25g of protein! (About 22.5g of protein from your Pumped Up Pancake mix and 3g of protein from the egg)
